Quick-fix Indian author Ruta Kahate is making several Bay Area appearances

Popular author Ruta Kahate, whose cookbook “Quick-Fix Indian” was published in May 2012, has been doing book signings and classes in the San Francisco Bay Area recently and has a few more coming up. For more details see her Facebook events page:

The subtitle of “Quick-Fix Indian” (Andrews McMeel Publishing, $16.99) is “easy, exotic dishes in 30 minutes or less.” In the past, the author and chef spent lots of time preparing dishes, including ones that she taught others how to make when she ran a cooking school in Oakland. Then, Kahate became a mother and she had a lot less time, but she still wanted to cook—especially for her new family (she has two daughters). “I discovered smart shortcuts, convenient tehniques, and quick-cooking ingredients that didn’t compromise on taste of nutrition,” writes Kahate in her newest book’s introduction. Kahate is also the author of “5 Spices, 50 dishes” (Chronicle Books, 2007).

“Quick-Fix Indian” features more than 100 recipes, plus a Quick-Fix Indian Pantry and Shortcut Shelf full of tips. The book instructs Indian cooking novices how to prepare selections such as Chickpea Salad with Pomegranate, Green Pan-roasted Chicken, Mushroom Chile Fry, and Indian Tater Tots. You’ll also learn interesting facts such as the natural benefits of traditional spices (did you know about turmeric’s ability to increase brain function?).

Kahate currently divides her time between the San Francisco Bay Area and India. She is opening a restaurant in Goa, India, in November 2012. I recently had the chance to speak with the chef and author about her cooking, her culinary philosophy, and her influences; some highlights are below. Q. How does your time in the Bay Area affect you as a chef and/or cookbook author?

A. The sheer variety of fun ingredients available here as well as the different types of world cuisine represented in the Bay Area are highly inspiring and so much fun! Truly, I have always cooked and eaten like this myself – when I was growing up in India we moved around the whole country because of my father’s job – and our table always had a nice variety of regional dishes on it.

When I moved to the Bay Area over 20 years ago, I promptly incorporated local influences in my cooking style. Actually, I rarely make an all-Indian meal unless it’s for a particular feast. Mostly, I’m mixing and matching all the time. This is why I feel people should be incorporating Indian in their weekly menus.

To do this successfully I think people need to first unburden themselves from the notion that they have to serve Indian dishes only with other Indian dishes. You really don’t need to. A good place to start the experiment will be to add one dish to your otherwise regular meal. For example, substitute the Curry Leaf Green Beans (for your usual steamed ones) and serve with your Sunday Roast Chicken dinner. Or start with the Red Braised Chicken and add your usual sides of mashed potatoes and salad, etc.

Q. What are one or two of your favorite recipes in “Quick-Fix Indian,” and why?

A. Wow, that’s a hard one. I very rarely fixate on one or two recipes. But recipes like Shortcut Shrimp and Okra Curry, Stir-fried Beef with Peppers, and Chicken and Cilantro Lime Soup are great to get people cooking Indian. They’re delicious, authentic in their Indian flavors and super easy to make!

Q. Do you have any advice for parents who want to cook healthy for their kids?

Use fresh ingredients, always. I don’t do processed food, period. And introduce variety in your kids’ diets. Insist they taste everything. Getting your kids to eat all kinds of interesting, and FRESH food is the best thing you could ever do for them. Being adventurous in their eating habits, I believe, opens little kids’ minds to the world in all other ways too. And of course, include lots and lots of fresh vegetables and fruits, no matter what else they’re eating.

Fixing vegetables in the Indian way really gets kids eating! It’s really a no-brainer – if the food tastes good, folks will eat it. It’s a nonsensical notion that kids are afraid of “flavor” or that they demand “plain” food. I believe it’s actually the other way around – I think parents approach mealtime with fear instead of with a sense of adventure, and this transfers to their children.

Why offer Jimmy plain macaroni with a pat of butter, instead of ladling on the sauce that the parents are eating themselves? In my home, there is simply no “plain” food available! The only concession I make towards children at the table is cutting down on the heat – not the flavor – in a meal.

Sand City’s The Independent Marketplace with organic produce, local meat and jam, food trucks, and more

There is a new monthly foodie event in Sand City — near Monterey — called The Independent Marketplace with organic produce and many independent food vendors plus drinks, music, and more. The July date is Thursday, July 5.

The first event was on April 5. The program occurs on the first Thursday of each month from 4-9 p.m. with rotating themes. Here are some details: it’s located at a building called “The Independent” which includes live/work spaces plus retail venues. Once a month it’s transformed to a market where inside, you can find organic produce, flowers, and plants; prepared foods such as jams; meat and fish from local ranchers and fishermen; crafts, and a kids’ area. Outside, there are hot food stands and food trucks. Plus, there is music, art, craft beer, and wine.

The July 5 installment has Americana as its theme (next month the theme is Santa Cruz). It features a “barbecue throwdown” between Carmel’s Bruno’s Market, Pacific Grove’s Aqua Terra Culinary, Castroville’s Central Texas BBQ, Monterey’s Kenny Wolf BBQ, and Spice It Up Catering and BBQ. Other specific vendors include Moto-Espresso Coffee Carts (serving coffee from their re-purposed Vespa, Penny Ice Creamery from Santa Cruz, and Sweet Elena’s Bakery & Café (selling pies).

Local chef Brad Briske, whose experience includes cooking at Gabriella Café and Main Street Garden & Café, will be at a special event at the Santa Cruz Downtown Farmers’ Market on July 4, 2012.

The Farmers’ Market recently started a monthly food/farm education series called The Foodshed Project, and this Wednesday is the second event (Next month’s theme is Peach Party). Beginning at 3pm, Briske and butcher Chris LaVeque (of el Salchichero) will be presenting. The event includes grilled grass-fed mini burgers, and provides information on the importance of pasture-raised meats and eggs.

Briske currently teaches classes at Let’s Cook!, a cooking school in Soquel. These include Sausage Making 101 (using organic pork from local Fogline Farms), Succulent Steaks, and Chicken 101. Read my recent article on Let’s Cook! LaVeque’s background includes a degree from San Francisco’s California Culinary Academy, an apprenticeship with Severino’s Community Butcher, an internship at renowned Los Gatos restaurant Manresa, and positions at local restaurants Cellar Door (now Le Cigare Volant) and Gabriella Cafe.

This Wednesday’s hours are 1:30-6:30 p.m. (summer hours for the market). The expanded hours usually last until Thanksgiving week. Between Thanksgiving and the week after Daylight Savings Time, hours are shortened to 1:30-5:30 p.m.

Farm to Table dinners with organic food & local wine at Chaminade in Santa Cruz: June 29 menu enclosed

This summer, Chaminade Resort & Spa hosts the 4th Annual Farm to Table Wine Dinner Series. The Friday evening series began on June 1 and it lasts until October; the next dinner is June 29 (see menu below). There will be seven dinners in all, each one prepared by Executive Chef Beverlie Terra and featuring fresh, seasonal offerings from local farms plus wine from the Monterey Bay region.

The cost is $80 per person plus tax and gratituity, and this includes a five-course gourmet meal plus endless wine. The setting is Chaminade’s outdoor terrace which has wonderful views.

Each event begins with a reception at 6 p.m. where wine and appetizers are served. Dinner follows at 6:30 p.m. For reservations, call (831) 475-5600. Event attendees are encouraged to chat with the local winemakers and farmers at these special dinners.

The featured winery for the June 29 dinner is Kathryn Kennedy Winery; featured farms are High Ground Organics and Field to Feast. Watsonville’s High Ground Organics is an organic family farm focused on growing flavorful, nutritious vegetables and fruits including kale, cauliflower, lettuce, and strawberries. Field to Feast distributes natural grass-fed beef and lamb, line-caught tuna, estate-grown olive oil, aged balsamic vinegar and other items.

The June 29 menu will include Sformatini, Heirloom Tomatoes and Meyer Lemon Relish with housemade pesto and a baby arugula salad; Burrata and Roast Beet Salad with honey drizzle; Braised Beef and Roast Wild Vegetables and Potatoes, and Honey Lavender Goat Cheesecake with Blueberries.

Scotts Valley Hop N’ Barley Fest with food, beer, and kids’ activities

On June 30, Sky Park in Scotts Valley hosts the 3nd annual Hop N’ Barley festival with many selections plus food — think lots of barbecue! — and kids’ activities. Hop N’ Barley festival organizers proudly state that this event is the “only beer festival in Santa Cruz County organized by a non-profit AND benefiting a non-profit.” Read details about the beneficiary non-profit, Community Housing Land Trust of Santa Cruz County, at the Land Trust web site. The organization is “…dedicated to providing a broad range of housing opportunities, with emphasis on ownership, that will remain affordable in perpetuity to very low, low and moderate-income residents of Santa Cruz County.”

More than 25 breweries are participating. There will be a kids area, skate park, free parking, bocci ball, four local bands performing live music, and it’s a dog-friendly event. Plus, there will be home-brewing demonstrations.

Food will be available to purchase from vendors including el Salchichero, Heavenly Café, Bruno’s Barbecue, and Cowboy Bar and Grill.

Gates open at 11:30 a.m., and tasting is from noon to 4:30 p.m. Music lasts from noon to 5 p.m. For those drinking beer, admission is $30 in advance/$35 at the door and includes a souvenir glass. There is also one ticket category which includes both beer and barbecue. The event has free admission for kids, designated drivers, and anyone else not drinking alcohol. Special 12-day dining event at many San Jose restaurants starts today

From June 20-July 1, many San Jose restaurants are participating in “Dine Downtown San Jose.” Diners can choose from three-course prix-fixe meals that range from $20-70 (plus tax and tip).

For example, choose the $20 menu at Myth and enjoy dishes such as Greek meatballs (first course), slow-roasted lamb shank (second course), and flourless chocolate torte (dessert). There are other selections as well. Or spend $30 at Gordon Biersch and select a three-course meal with choices such as shrimp & chicken potstickers, Tuscan chicken pasta, and strawberry cheesecake. For $40, try Morton’s selections like baked five-onion soup, 6 oz. filet mignon with broccoli hollandaise or horseradish mashed potatoes, and crème brulee.

News about Westside Santa Cruz restaurant Café Iveta

Westside Santa Cruz's Cafe Iveta is a pleasant and affordable venue with delicious offerings

Since Summer 2010, family-owned-and-operated Santa Cruz restaurant Café Iveta has provided locals with great coffee, tea and espresso, a variety of lunch items such as sandwiches and soups, and many pastries including scones (interesting fact: scones are how Iveta first started, as a food company with products including baking mixes with scone mixes as its specialty). I am a fan of Café Iveta and want to share some of the changes at Café Iveta that have occurred in the last few months.

Lunch offerings have always included several tasty sandwiches served on local fresh bread. There is a BLT (Iveta’s best-selling sandwich) with crispy hardwood smoked bacon, fresh Bibb lettuce, and homemade spicy mayonnaise. Some customers add soft-poached egg or avocado. Or Tunisian Tuna with white albacore tuna, red and green bell peppers, and hot giardiniera, and Caprese with fresh mozzarella, homemade pesto, and tomatoes. Now the café also has a lunch combo for $8, which is perfect if you’re in the mood for something lighter. You get a half-sandwich plus a cup of homemade soup or a half Italian salad. Soup choices vary and have included roasted eggplant and cream of mushroom. The salad features mixed greens, garbanzo beans, tomato, shaved Parmesan, and homemade croutons.

Another new lunch choice: “quick-grab sandwiches,” perfect if you’re on the go or want a small sandwich for any other reason. These are Salami and Provolone ($3.25) and Imported Prosciutto and Brie ($4.95).

In recent months, Café Iveta has done some successful remodeling. Now there is an expanded gift shop and a very pleasant large patio. The retail shop has items like scone and muffin mixes, tins of tea, and bakeware. Also, the café has an upstairs area available for rental if you are in need of a Westside Santa Cruz space for a work meeting or a small party. Organic produce and flowers offered through UCSC Farm and Garden Market Cart

The UCSC Farm & Garden Market Cart has opened for the summer season

The UCSC Farm and Garden Market Cart launched its annual season on June 1, 2012 with a variety of organic vegetables, fruit, herbs and flowers. You can find the cart every Tuesday and Friday through October 30, from 12-6 p.m. at the base of the UCSC campus, on the corner of Bay and High Streets. The cart is operated by CASFS (The Center for Agroecology & Sustainable Food Systems).

Selections will vary as the farm season changes, but early-season offerings include strawberries, blueberries, tender lettuces, and other greens. Later in the season, available items will include sweet corn, dry-farmed tomatoes, plums, potatoes, sweet and hot peppers, and basil.

All items are grown at the UCSC Farm and Garden by staff and students in the Apprenticeship in Ecological Horticulture training program, and all proceeds benefit the Apprenticeship program. For more information contact (831) 459-3240 or casfs@ucsc.edu.

Santa Cruz restaurant Gabriella Café hosts literary salon series

Downtown Santa Cruz restaurant Gabriella Cafe hosts a monthly literary salon series, and the next event is on Tuesday, June 5 with author and UC Santa Cruz Russian history professor Peter Kenez the featured reader. Kenez is a Hungary native and a Holocaust survivor; he delivered the Spring Emeriti Faculty Faculty Lecture at UCSC in March.

Gabriella’s salons, which began in February 2012, are held on the first Tuesday of each month. Past speakers have included John Dizikes and poets Stephen Kessler and Lisa Ortiz; future speakers include Patrice Vecchione and Gary Young (the latter will be a special “bonus salon” in September on the 18th in addition to the regular salon on September 4).

Dinner with the speaker begins at 8 p.m., with readings/discussions starting at 9 p.m. over dessert. Call (831) 457-1677 to reserve a table. I enthusiastically recommend the food at Gabriella, which is created using lots of produce and herbs from local farms such as Live Earth, Happy Boy, and Freewheelin’. In the last few months I’ve had two great dinners and two fabulous lunches there. One favorite dinner entrée was tagliatelle with chanterelles, leeks, and gorgonzola. Lunch highlights included a unique and delicious cauliflower soup with crispy parsnips, and a flavorful feta-asparagus pizzetta.

Food and Wine Classic at Montalvo Arts Center in Saratoga: nearly sold out

Montalvo Arts Center hosts the ninth annual Food and Wine Classic Sunday with 21 chefs from prestigious Bay Area restaurants and 22 wineries. Held from 5:30-8:30 p.m. on June 3, the gourmet event benefits Montalvo’s arts and education outreach programs.

The evening includes a silent and live auction with items such as rare and limited-edition wines and deluxe dining and travel packages. Event tickets are $175 ($150 for Montalvo members): note that as of this article’s publication, there are less than 15 tickets remaining for purchase.
